31. Plant-based diet and meal prep tips for the curious beginner

“What’s for dinner???”  Does that question make you want to run and hide???  For a non-cook like me, the answer is an emphatic “YES!!!” It’s too easy to go to a nearby drive-thru, which I’ve done more times than I like to admit.  But what if it was possible to prepare healthy meals quickly and efficiently?

In this episode, I had a great conversation with Faith VanderMolen, whose simple yet tasty recipes give me so much hope!  Also, if you are curious about what it takes to incorporate plant-based foods into your diet or maybe even transition into a plant-based diet, this episode is for you!    

Faith has a growing YouTube channel, Conscientious Eating with Faith where she has value-packed and simple how-to videos featuring her delicious and healthy vegan meals.  She also has a recipe book available for purchase on Amazon called Plant Biased: 90+ Easy Recipes and Essential Guide for the Plant-Based Beginner.

What I appreciated most about Faith is how she encouraged me that it is possible to prepare healthy meals quickly and efficiently even if you work 40 plus hours a week.
